Recipe for drinking chocolate


Although the Archives Centre is best known for its twentieth century collections, we do have a few older items, including this recipe for "The Common Way of making Chocolate in the west Indies, from Mr Green of Barbados, 27 Mar 1758".

"In the following manner Chocolate is made [in] the West Indies for drinking, either for Breakfast or Supper, or both.
"Put one ounce of Ground Chocolate to three Gills of Water [one gill equals a quarter of a pint], boil it together till it is reduced to two Gills, then add two Gills of Milk and let it boil till the whole is well mixed, mill it for use.
"The Sugar to be put in at the time the milk is, the quantity of Sugar as one likes best."
